Leading the way is Head Chef, Josh Rudd, who honed his craft in some of Melbourne’s most acclaimed hatted restaurants before joining Nudo. His mission was simple but ambitious: to deliver food and service that rival Melbourne’s best dining experiences, but at scale. Today, that’s exactly what he does — creating dishes that are as memorable as the setting itself.
